Sai Tung Green Curry and Red Gaba Rice

Walk among the street vendors in Bangkok and you’re bound to hear the question, “Sai tung?” This literally means, “Put in bag?” Unlike the more handy, American street foods (think hot dogs), cuisine of the Thai street is not as easily presented on a bun. Flavorful curries with unique vegetable combinations require a different container. Trader Joe’s Sai Tung Green Curry with Sprouted Red Rice is our attempt to transport you to a Southeast Asian boulevard for an uncommon and delectable ‘take-away’ experience!

This vegan dish combines three distinctive ingredients: young coconut shoots, banana flowers, and Morning Glory greens. The coconut shoots have a very mild, coconut flavor. In texture, they are a like a cross between a bamboo shoot and a heart of palm. Banana flowers—typical in Vietnamese cuisine—exhibit a touch of tartness, with a firm, almost meaty texture. The spinach-like quality of Morning Glory greens rounds out this trio. All three are simmered with additional spices in a traditional, coconut milk based sauce. We pair this curry with Sprouted Red Gaba Rice, which is a bit chewier than white rice, but more tender and moist than the typical brown variety.
