Ricotta & Spinach Cannelloni

We are always seeking the freshest ingredients as the basis for our products. This remains true, even for our frozen selections. Trader Joe’s Ricotta & Spinach Cannelloni is a primo example.

While touring an Italian pasta factory near Parma, we had the sudden realization that an authentic, stuffed-pasta entrée was exactly what our frozen case needed. We created a single serving, which includes two rolls made from fresh (not dried) egg & semolina pasta. The Cannelloni are filled with spinach and a combination of ricotta and mozzarella cheeses—a very traditional recipe. Our rolls are topped with béchamel (white sauce) and tomato sauce. The spinach for the filling and tomatoes for the sauce are grown expressly for our supplier, ensuring the high quality of these vegetables.

It is also worth noting the elegance of the artisanal machinery that is used to roll and cut this fresh pasta and place each Cannelloni gently in the tray before adding the sauce. The process, itself, is a thing of beauty!

Add it all up—the artisanal process, the fresh ingredients, and the traditional recipe—and you get an Italian meal that no one would guess comes from the freezer.
