One prominent culinary magazine calls this recent phenomenon the ‘healthiest new food trend.’ So, what’s in a grain salad, anyway? As you might guess, it’s a selection of whole grains, blended with some combination of nuts, seeds, fresh veggies, and dried fruit. Plenty of roasted Virginia peanuts, California pistachios, and pumpkin seeds, mingle with edamame in a milieu of two “ancient grains”—namely, Red Quinoa from Bolivia and spelt. Tiny, diced carrots—matching the size of the spelt—add to the hearty texture. A light dressing of pomegranate juice, lime juice, soy sauce, honey, and vinegar, helps maintain the overall sweet-tart balance, while aromatic hints of ginger, garlic, and sweet chilies lend a distinctly Thai twist.
