How To Make Bestovers

Been eating the same pesto pasta for 4 days in a row? Has peanut butter and jelly sandwich become a food group? You are not alone. Even the savviest cooks, when pressed for time, can fall into a leftover rut. In fact, lately, we’ve been staring into the fridge with despair and our brown-bagged-midday-meals are giving us the reheat-repeat blues. There has to be a better way.

There is. We started by posing the question, “What makes a meal awesome?” Collecting data from the water-cooler and playground crowds, we gathered that variety – starch, protein, fruit, veggies, dairy – as well as an element of the unexpected – say, a surprise special sauce (i.e. Roasted Red Pepper Spread in lieu of Mayonnaise) – are what take a meal from ho-hum to humdinger! And, when it comes to leftovers, the best approach is not to re-use, but to re-purpose.

Putting our theory to the test, we created a “Bestovers” plan.  It starts with 3 dynamic dinners that take 20 minutes or less to prepare. From each dinner, we re-purposed the same main ingredients to create two types of lunches: 1. For the “briefcase” 2. For the “lunchbox.” What did we learn? Making quick-and-delicious, decidedly unboring meals that will please both the pickiest and most adventurous of palates can actually be as easy as it is fun. Sound smart?
